Cauliflower Oats for Breakfast
Always on the hunt for ways to include more diversity and fibre, and importantly up the number of vegetables I have in a day, I was intrigued when I saw a baked oats recipe for including cauliflower. So here goes,
With a few tweaks, this is now a firm favourite. This one mix will normally do 3 breakfasts if served with a nice filling Greek yogurt, berries and some nuts.
It's one of those - you have to have faith and give it a try. I promise you won't regret it.
Baked Oats Recipe
Preparation: 2 min
Cooking:25-30 min
Serves 2-3
1 cup jumbo oats
1 cup chopped cooked cauliflower
I cup milk
I egg
1 tsp cinnamon
Small handful almonds chopped
1 tbs maple syrup
1/2 cup blueberries
1 tbs nut butter
Combine all the ingredients. Pour into a lined baking dish or 2 mini dishes. I use 2 mini silicon loaf moulds, or a muffin tray.
Bake at 180 degrees for about 30 minutes or until browned and firm to the touch.
Allow to cool slightly before serving.
The oats, cauliflower, milk, egg and cinnamon are the base.
After that experiment with ingredients.
For example, swap blueberries for grated apple, swap almonds and nut butter for walnuts and use honey as a sweetener.
Note: Serve with Greek Yogurt (extra protein) and extra blueberries
