SIMPLE LENTIL DAHL

This lentil dahl is so simple but amazing. My meat loving hubby raves about it.
150g Red Lentils
250ml stock
1 tsp ground turmeric
1 tbs coconut oil (or olive oil)
1 onion diced
2 tsp cumin seeds (or ground cumin)
½ can coconut milk
½ can chopped tomatoes
Handful of coriander leaves
Bag Spinach
Method
Rinse the lentils. Heat the stock and turmeric in a saucepan and add the lentils.
Simmer covered for 15 – 20 minutes. Keep an eye on this as it may need more water to avoid drying out.
Melt coconut oil in a pan and sauté the onion and cumin seeds
Add the cooked lentils to the onion and seed mix. Add the remaining ingredients and simmer together for a few minutes.
Serve your Dahl with some Blini pancakes below.
Savoury Blini/Pancakes
150g Chick Pea/Besan Flour
1 egg
200ml water
Sieve flour and add in egg and enough water to make a batter.
Thick batter for small blini pancakes thinner for big pancakes.
Dessert spoons make blinis.
