(Nutrient Analysis from Nutritics Software and excludes rice or extras)
Ingredients
600g chicken thighs (trimmed and cubed)
1 onion sliced
1 tsp peanut butter
1.5 tbs curry powder
1 tbs cumin
1 tbs garam masala
I red chilli chopped or ½ tsp chilli flakes
150ml stock
1 can chopped tomatoes
1-2 tbs tomato puree
4-5 garlic cloves minced
Salt and pepper
40g (small handful of red lentils) and a bit extra water thickening
Also sometimes add some frozen peas
Add everything to the slow cooker and cook on high3-4 hours or low for 7-8 hours.
Serve with a side of greens and if desired a few spoons of brown rice for extra fibre
A couple of things to bear in mind
The chicken thigh brand and how much fat is actually trimmed will make the biggest difference to calories and fat. Using chicken breast will reduce calories and fat.
If the stock you're using is something like the M&S frozen chicken bone broth, the overall recipe protein could be a little higher depending on the amount of protein in the particular stock.
You can add all sorts to this to add in nutrients: Spinach and butterbeans are favourites of mine.
Serve with broccoli and 2 tbs of rice and its a perfect nutrient mix for women over 50
