Gluten Free Flaxseed Granola

This is an easily made granola, 10g protein and 10g fibre per portion, grain free, gluten free and full of healthy fats. And on top of all that, it tastes amazing with yogurt and/or milk of your choice and some chopped fruits - figs and blueberries are my favourites.


4 Portions

1 cup flaxseed/linseed (whole)

1/2 cup water

Cinnamon, nutmeg and a few cloves

6 brazil nuts chopped

6 walnuts chopped

12 almonds chopped

Coconut flakes

Small handful dried cranberries

3-4 chopped dried apricots


Mix flaxseed/linseed with water and spices and steep overnight in the fridge.


In the morning spread the thickened flax mix on a lined baking tray (remove cloves) and bake at 135 for 50 minutes.


10 minutes before the end of cooking time, add in the rest of the ingredients breaking up the flaxseed mix.


Let cool and store in airtight container for up to a week


This is lovely as is, and plenty of sweetness in the cranberries and apricots. But if you wanted a bit of extra sweetness swap some of the water for apple juice or squeezed orange juice.
