Italian Sausage Casserole


A wee photo video collage of a Sausage and Root Vegetable Casserole that is a staple in my house. Everybody loves it and it's my opportunity to load it up with plenty of nutrient - colourful veg, fibre, protein rich stock and some healthy fats. It's a versatile dish, just use whatever you have.


I use M&S Italian sausages (outdoor bred) and whatever herbs I have handly - parsley and rosemary are great.


A mix of chunky onion, carrot, turnip, parsnip and either potato, sweet potato or butternut squash.


I go heavy on the lentils with this dish, both red and green. The red lentils don't need precooked and tinned green lentils are fine.


Use the best stock you can afford, I use Carols Stockmarket stock or bone broth, but a good quality supermarket stockpot will be fine.


A super slow cooker star.
