High Protein Halloween Baked Oats

Women over 50 will love this high protein baked oats as a seasonal breakfast or snack. Perfect for any time of year but the smells and flavours really evoke the autumnal feels.

Halloween Baked Oats

495 calories, 21g fat (3 saturates), 49g carbs (18g sugars), 10g fibre, 32g protein


Makes 2 servings 


  • 80 g oats 

  • 1 tbsp flaxseed

  • 2 tbsp hemp seeds

  • 1 egg + 1 egg white

  • 100 ml semi-skimmed milk

  • 2 small apples  (grate 1.5 apples and slice remainder)

  • 1 tsp cacao

  • 1 tsp pumpkin spice (or 1 tsp mixed spice and cinnamon mixed)



Mix everything well, pour into a lined loaf tin and decorate with sliced apple and bake for about 30 to 40 minutes at 180. Perfect for the airfryer. I normally always reduce the temperature by 5-10 degress in the airfryer and a slightly shorter cooking time. For this I baked at 175C and 35 minutes.


Allow to cool slightly. Cut into 6 slices.


To serve: for each serving (3 slices)

  • 120g Greek yogurt 0% fat 

  • ½ tbs Pumpkin seeds 

  • 3  walnuts per serving


Also works well sliced as a healthy snack. One slice would be about 6g protein, 3g fibre and just over 100 fnutritionally balanced calories.


Pumpkin spice mix (from Little Lou Cooks)

This is perfect for a spiced latte, adding to my porridge bread, or oat cookies or Healthier Banana Bread.


  • 4 tbs ground cinnamon

  • 1.5 tsp ground nutmeg

  • 1 tsp ground ginger

  • 1.5 tsp all spice

  • ½ tsp ground cloves

Or just mix 3 tbs cinnamon and 3 tbs mixed spice
