The perfect quickie curry for leftovers. Use whatever veg you have and if you havent any garam masala, turmeric or ginger substitute with 2 tbs curry powder.
This is also nice as a vegetarian option. Add more veg eg broccoli, and a tin or 2 of butterbeans or chickpeas in place of the turkey.
Ingredients
Splash Olive Oil
1 medium onion sliced
1 red pepper and 1 yellow pepper chunked
1 tsp chilli flakes
3 cloves garlic crushed
3 cm ginger grated
3 teaspoons garam masala
2 teaspoons turmeric
500 g leftover cooked turkey
350 ml chopped tinned tomatoes
200 ml full fat coconut milk
Salt and pepper to taste
Method
Softly fry the onions and peppers in the oul until softened but not brown.
Add the spices and cooked gently for 2 more minutes adding a small splash of water if it's too dry.
Add the turkey (or any cooked meat, chopped tomatoes, coconut milk, salt and pepper and bring to the boil.
Simmer until the sauce has thickened slightly and the turkey is well warmed through.
