This is a gorgeous soup, using up whatever I had in the fridge and boy did it all work together. Thick and very filling. But be warned, you'll need a big saucepan.
8 Large Portions, 250 calories, 33g carbs, 6 g fat, 9g fibre, 10g protein
2 onions
5 cloves garlic minced
1 thumb ginger minced
1 inch turmeric grated
4 celery sticks
4 large carrots
3 parsnips
½ cauliflower
½ broccoli
1.5 litres water & 2 stock cubes
or 500ml Carols Stockmarket Stock plus 1 litre water
200g red lentils
2 bay leaves
handful parsley
125ml single cream
Method
Chop onion, garlic, celery and carrot (I blitz in the processor) and saute in olive oil for a few minutes. Add in everything else.
Bring to the boil, reduce heat and simmer on very low for about 45 mintues or until lentils and veg are soft.
Blitz using hand emersion whisk or whatever blitzer you use. Add in the cream.
Notes
Soup is very thick and very filling. Carols Stockmarket Broth or Stocks make a real flavour difference to this soup
Optional
Add a large chicken breast chopped with the vegetables for extra protein. Or add a cooked chicken breast shredded after cooking.
